Growing up there were staples that my Grandmother always made (sweets of course). Many stand out as favorites. Through the years I’ve made some of them. It is no secret that I hate to cook. Same goes for baking. Spending my day in the kitchen is just not my idea of fun. So I am always looking to simplify, yet maintain the memory.
My nieces were in town visiting and came to spend the night. In preparation I had gone to the store to make sure I had some snacks and basic food necessities in the house. The plan was to make a simple snack the girls could have after dinner. As I walked the aisles, I flashed on an old family favorite: Graham Cracker Cookies. Or as we called them, Graham Crackers with frosting.
Now when my Grandmother makes them, she makes her own chocolate frosting. While easy to do, I’m just not interested in making my own. On top of that we had so much packed into the day that I wanted to avoid the time and mess. So I cheated. I bought a container of chocolate frosting and a box of graham crackers.
In five minutes time, I had assembled an entire plate full. Simply break the graham cracker in half, slather some frosting on one side, and stick them together. Instant yum! The girls (OK and I) devoured them all in about the same amount of time they took to make.
This is a great treat to add to your recipe box (though you don’t really need a recipe). It’s perfect for a quick dessert when visiting friends, after school snack, or picnic in the park. It’s a no fuss, no effort dessert.
