A couple of weeks ago, I told you how freezer meals changed my life. Those that have tried them, agreed. Those that hadn’t were curious and slightly skeptical. There was a concern that it would take too much organization (it doesn’t take any!!). There was also the hurdle of figuring out what recipes to try.
We’ve been working to build our list of tried and true, go-to freezer meals. Today, I’m going to share 4 of my favorite recipes with you. All you will need to do is buy the ingredients and set aside 30-minutes to put them together. Yes, that is 30-minutes to prep a weeks worth of meals! Sounds crazy. Just try it.
4 Easy Freezer Meal Recipes:
- Sweet & Sour Meatballs – From Our Best Bites – These are so simple and super tasty! It’s the perfect freezer meal to try when you are just getting started. There are only 2 ingredients…well 3 if you count the meatballs. We loved these with mashed potatoes (the sauce goes well as a gravy). Then just open a veggie. Meal done. This provides lots of leftovers too!
- Ranch House Pork Chops – You have likely seen this recipe posted all over Facebook and Pinterest. It tastes amazing! Again, 3 items is all you need (pork chops, 1 can cream of chicken soup, and 1 ranch dip packet). Just dump your 3 ingredients into the freezer bag together (raw). When you are ready to cook it, put it into the crockpot frozen. Cook on high for 4 hours. Our preference is mashed potatoes with this one as well. However, rice is also an option.
- Shredded Chicken Tacos – From Two Healthy Kitchens – This is so easy and has become a staple for us! Again, 3 ingredients. I make this as a freezer meal and combined chicken breasts (raw), 1 jar of salsa, and 1 packet of taco seasoning (we go with low sodium to cut down on salt flavor at end). Dump them all into the bag and freeze them. When you are ready to cook, just cook them in the crockpot on high for 4 hours. Pull the chicken out at the end and shred it (tip: use your kitchen aid mixer with your paddle attachment). Then add some of the sauce back to the chicken until you get the desired consistency. All you need to complete this meal are taco shells and toppings.
- Lemon Garlic Chicken – From One Good Thing by Jillee – So much flavor! We actually grilled this the first time we made. I wasn’t expecting much, but we were impressed. This one will no doubt be a staple. Serve with rice (I have a great garlicky Cuban rice recipe we love that pairs well) and a veggie.
